Our air-dried Carinthian bacon is made from high-quality pork belly sourced from Austrian AMA quality-certified pigs. The animals are raised slowly and under humane conditions. Thanks to natural feeding, the meat develops a particularly fine texture and a rich, well-balanced flavor.
Before the curing process begins, the pork belly is refined for several weeks with natural herbs and carefully selected spices. Pepper, garlic, coriander, and other finely balanced ingredients allow the flavors to fully develop throughout the meat. The bacon is then matured for many months in the fresh Carinthian mountain air. During this time, it slowly loses moisture, developing its characteristic firm texture and intense flavor.
The result is a fully matured bacon with harmonious seasoning, a compact texture, and delicate herbal notes. The long curing period creates a perfect balance between tender meat, savory bacon aroma, and traditional craftsmanship.
