Beef Salami without Pork – approx. 200g This beef salami without pork is a true Carinthian specialty and stands for traditional craftsmanship, high-quality ingredients, and authentic flavor. It is produced in the Lavant Valley by master butcher Seppi Freitag, whose family has been making this special salami according to the same traditional recipe for more than 90 years. The long-standing experience and careful processing make this specialty something truly unique. Unlike conventional salami, no pork fat is used. Instead, high-quality beef tallow gives the salami its rich flavor and pleasantly firm texture. The carefully selected beef comes exclusively from the region and is gently processed to preserve the natural meat quality and full aroma. The salami is refined with selected spices that are traditionally hand-crushed. It is then slowly matured and traditionally smoked over beechwood from the family’s own forest. This traditional smoking method gives the salami its mild, natural smoky aroma, which harmonizes perfectly with the savory meat flavors.
