Description
The Hofstetten Brewery has enjoyed great success with its Granitbier for many years. To further cement the theme of granite in the beer, the decision was taken in 2008 to brew a GRANIT BOCKBIER for the first time. The brewhouse, dating from 1929, already provides the perfect conditions for this beer. Primary fermentation takes place in 120-year-old granite vats, allowing the stone time to impart its history to the beer. To achieve the Granitbock’s distinctive flavour, granite stones are heated until glowing over an open fire. When these are then immersed in the beer, the sugar in the wort caramelises on the hot stones. The yeast is then prepared in the traditional manner and added to the vats. This labour-intensive process results in a dark bock with lovely caramel and roasted aromas. After six months’ maturation in the deep vaulted cellars, we bottle the beer completely untreated. This beer is unfiltered and unpasteurised to preserve its full flavour. Stored correctly, it matures into a true gem.
