This variety stands out for its compact, tapered head and particularly tender leaves. Its mild, sweet flavour makes it the perfect choice for crisp salads, fresh sauerkraut or as a vitamin-rich accompaniment to hearty dishes. Sowing works best in nutrient-rich, humus-rich soil – start your seedlings between February and April, transplant the young plants into the bed from April onwards, and look forward to a bountiful harvest from July to October. Thanks to its late maturity and good storage life, your Filderkraut will stay fresh and crisp until around April. Tip: Thin strips eaten raw in a salad, steamed as a vegetable or fermented as sauerkraut – the versatility of this cabbage enriches any kitchen.
