The pork ham crisps are salted with natural salt, kept in pre-drying-chambers for a few months; then moved to the warm ripening chamber for the remainder of the ripening period. The ham is made preservable by the dehydration through the air. Lastly the ham is thinly sliced and dried again to make it crisp.
