The story of Ildefonso is at least as exciting as the nougat confectionery is delicious. Created in 1880 by the confectionery master Victor Schmidt, the seven-layer nougat cube developed into a favorite of all chocolate lovers. The then current trend of naming confectionery by first name also influenced the family.

But where did the inspiration for this name come from? Theodor Schmidt Senior stopped by in Toledo on a trip to Spain: A church in Toledo, which was dedicated to the canonized Bishop Ildefonso, made such a lasting impression that a nougat cube became the unique Ildefonso confectionery.
It was due to the excellent quality of the Ildefonso that they made a splendid entry into elegant Viennese society at the beginning of the 20th century. The confectionery was soon loved by everyone—and this is still true in the 21st century!
Four layers of dark nougat which melts in your mouth and three layers of the finest light nougat covered in plain chocolate, are the secret behind the delicious nougat praline. Victor Schmidt invented the successful product in 1880.
This classical recipe - which has not been changed since 1920 - makes for the traditional taste of the Ildefonso nougat. Only the best quality hazelnuts are used to give the Ildefonso nougat its strong nut aroma.
For this reason, the bite-sized cubes in their salmon-coloured Ildefonso paper ribbon enjoy great popularity with young and old.
