Description
Our Asian fermented foods are grown and harvested by indigenous peoples in Vietnam using biodiversity-promoting farming methods.
The economic added value also remains with the local population, as the carefully selected fruits or roots are lovingly cut into small pieces by hand and matured in a 5-step production process over 3-4 months. This creates new and interesting flavor palettes and changes the color.
The local partners do not use insecticides, fungicides, pesticides, herbicides, or chemical fertilizers. In some stations, worms and microbes are bred to ensure healthy soil.
The fermentation process used is based on ancient knowledge and follows an age-old artisanal production process. Most of the products are rich in fiber, and the locals use fermented products for their microbiome and for a healthy intestinal flora.
